Sugar Cookies

1 cup butter, softened
2/3 cup sugar
1 egg
2 tsp vanilla2 1/2 cups flour, sifted

1. Cream together the butter and the sugar.
2. Beat in the egg, make sure you scrape down the sides to get it all incorporated.
3. Combine the vanilla and sifted flour in a smaller bowl.
4. Add the flour mixture to the butter mixture and mix until all the ingredients are well blended.
5. Wrap the dough up and let it chill in the refrigerator for around an hour, until it's nice and hard.
6. When the dough has chilled, roll it out and then cut out your cookies.
7. Bake at 350 for 8-10 mins until the cookies are barely colored.  Let the cookies cool before frosting.  

Frosting

3/4 cup confectioner's sugar
1 tbsp butter
1 tbsp milk
1/2 tsp vanilla
1/4 tsp lemon juice

1. Melt the butter.
2. Combine all the ingredients and beat until smooth.

This only yields 1/3 cup frosting, so plan on adjusting this recipe is you need a lot of frosting.
