Pumpkin Bread
3 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp each ground ginger, nutmeg and cloves (allspice, optional)
3 eggs
2 cups canned pumpkin
1 cup canola oil
2/3 cup sugar
2/3 cup packed brown sugar
3 tsp vanilla extract
chocolate chips
1. In a large bowl, combine the flour, salt, baking soda, baking powder and spices.
2. In your mixing bowl, combine the eggs, pumpkin, oil, white and brown sugars and vanilla.
3. Mix in the dry ingredients and mix until it is just moistened.
4. Fold in the chocolate chips (or if you prefer nuts or crasins, you could add that instead, whatever you like, really)
5. Pour the batter into two buttered and floured 8x4" loaf pans
6. Bake at 350 for 45-55 minutes, checking it regularly after 40 mins to see if it is done (insert toothpick in multiple places to see if it comes out clean everywhere)
7. When done, cool in pans for at least 10 minutes on wire racks
8. Once cooled, remove from pans and enjoy!
