Oatmeal Cookies

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp salt
1 1/2ish tsp cinnamon
3-4 cups quick oats


1. In a medium bowl, cream together the butter, white sugar and brown sugar.
2. Beat in the eggs, one at a time.
3. Stir in the vanilla
4. Combine the flour, baking soda, salt and cinnamon in a small bowl.  Add this mixture to the creamed mixture.
5. Cover the bowl and chill the dough for at least one hour.
6. Preheat the oven to 375
7. Roll the dough into about 2-inch balls and place on the cookie sheet about 2 inches apart
8. Bake for 10-15 minutes, until they turn lightly brown on top.  Cool for a few minutes on cookie sheet before moving to wire racks to cool completely.
